  • 4 C. cold pasta
  • 2 C. summer veggies, sliced
  • 1 can beans, drained and rinsed
  • 3/4 C. sweet corn
  • chopped basil, cilantro, and mint, to taste
  • Cilantro-Lime Dressing
  • 1 C. cilantro
  • 1/3 C. oil
  • 1/2 C. yogurt
  • 4 oz. roasted mild green chilies
  • 2 cloves garlic, chopped
  • 1 tsp. cumin
  • 3/4 tsp. sea salt
  • zest of 1 lime
