  • 4 sweet potatoes, peeled
  • 1 egg
  • 1 stick butter, divided
  • ¼ C. sugar
  • 1 C. brown sugar, divided
  • Dash salt
  • 2 tsp. cinnamon, divided
  • 1 tsp. vanilla extract
  • 2 T. milk
  • ½ C. flour
  • ½ C. panko bread crumbs

Preheat oven to 350 degrees. Boil sweet potatoes until easily pierced with a fork and tender. Drain and transfer sweet potatoes to a large bowl and mash them. Add in egg, ½ stick melted butter, 1 teaspoon of cinnamon, ¼ cup of brown sugar, sugar, salt, vanilla, and milk; beat until smooth. Pour into a greased baking dish and bake for 30 minutes. In a bowl, combine flour, remaining brown sugar and cinnamon, bread crumbs, and ½ stick of cold butter. Mix until crumbly. Sprinkle into sweet potato mixture and continue baking for an additional 20 minutes.
