  • 1 Tbs. olive oil
  • 2 Tbs. salt
  • 1 16-oz. pkg. tortellini
  • 1/4 lb. butter
  • 1 C. freshly grated parmesan

Bring 4 qts. water contains 1 Tbs. oil to a boil. Add 2 Tbs. salt, then the tortellini. Cover until water returns to a boil. While the tortellini is cooking, cut 1 stick butter into thin strips and put in a very warm serving bowl. As soon as the tortellini are cooked al dente, should be about 5 minutes, transfer them with a colander to the bowl containing the butter. Add grated cheese and toss. All tortellini should be coated with butter and cheese. Serve immediately.
