Simplest Pumpkin Soup
Ingredients
- 1 whole pumpkin
- 1 small jar pumpkin
- 5 oz. coconut milk
- 2 C. vegetable stock
- ginger to taste
Directions
Clean pumpkin. Preheat oven to 400 degrees. Place pumpkin on baking sheet and roast it for about 1 hour or until soft. Remove seeds and skin. Combine fresh pumpkin with canned pumpkin, coconut, milk, vegetable stock, and ginger in a blender and blend until creamy.
Serve with: Hot Rolls
