  • 1 onion, diced
  • 4-6 cloves garlic, minced
  • 8 C. vegetable broth
  • 4 (15 oz.) cans cannellini beans, rinsed and drained
  • 1 tsp. rosemary
  • Salt and pepper to taste
  • 3-4 tomatoes, chopped

In a pot, heat oil and sauté onion and garlic until softened and fragrant. Pour in vegetable broth, beans, rosemary, and tomatoes. Bring to a boil, reduce heat, and simmer for 20 to 30 minutes. Season with salt and pepper and serve.
