Sinful Caramel Pecan Pie Bars

- 1 (24 count) pkg. refrigerated sugar cookie dough
- 1 C. brown sugar, packed
- 1 C. corn syrup
- 1/2 C. unsalted butter, melted
- 4 eggs
- 1 tsp. vanilla extract
- 2 C. chopped pecans
- 1/2-2/3 C. salted caramel sauce
Heat the oven to 350 degrees. Line a baking pan with foil making sure to cover the edges of the pan. Lightly grease the foil with cooking spray. Gently press the cookie dough into the bottom of the pan in an even layer. Bake for 10 to 13 minutes, or until the dough is slightly puffy and golden brown. Remove from the oven, but leave the oven on.
Meanwhile, in a large bowl whisk together the brown sugar, corn syrup, melted butter, eggs, and vanilla until smooth. Stir in the pecans. Evenly spread the pecan mixture over the baked crust. Return to the oven and bake for an additional 25 to 30 minutes, or until the filling is bubbly and almost set.
Let the bars cool completely, then refrigerate for several hours to set. Once set, cut the sheet into bars and drizzle the sauce with caramel sauce.
