Transform leftover steak into a hearty, easy-to-make sandwich layered with caramelized onions, goat cheese, and baby spinach. While we made our sandwich with a ciabatta roll, feel free to substitute your own crusty bread of choice.

  • 2 Tbs. Olive Oil
  • 2 Medium Onions, thinly sliced
  • 1 1/2 tsp. Light Brown Sugar
  • 2 Tbs. Balsamic Vinegar
  • 4 Tbs. Butter
  • 1 lb. Pre-Cooked Sirloin Steak, thinly sliced
  • 4 Ciabatta Sandwich Rolls, toasted and sliced lengthwise
  • 4 oz. Goat Cheese
  • 1/4 C. Baby Spinach Leaves

Warm the olive oil in a medium skillet over medium-high heat. Add onions and cook until translucent. Add brown sugar and vinegar along with 1/2 cup of water. Let mixture simmer until water has nearly evaporated. Add the butter and slices of steak, and stir until butter has melted and steak is warmed through. Layer atop one half of each sandwich roll, in order, even amounts of goat cheese, baby spinach, and the steak with onions. Top each sandwich with the second half of the roll and gently press down to help the sandwiches stay together.
