  • 2 large bananas
  • 1 tsp. baking powder
  • 4 T. flour
  • 1 T. sugar
  • 1 egg
  • Vegetable oil

Heat your oil in a shallow pan to 375 degrees F. Mash the bananas in a bowl and add the other ingredients. Mix together well. Spoon batter into oil 1 T. at a time. Cook until thickening, then flip. Continue cooking until the whole fritter is golden brown. Serve warm.
