  • 2 lb. boneless, skinless chicken breast halves
  • 1 (14 1/2 oz.) can petite diced tomatoes with green chilies
  • 1 red bell pepper,julienned
  • 1 orange bell pepper, julienned
  • 1 green bell pepper, julienned
  • 1 large onion, halved and sliced
  • 4 cloves garlic, minced
  • 2 1/2 tsp. chili powder
  • 2 tsp. ground cumin
  • 1 tsp. paprika
  • 3/4 tsp. ground coriander
  • 1 tsp. salt
  • 3/4 tsp. pepper
  • 2 Tbs. fresh lime juice
  • 1 Tbs. honey
  • tortillas, for serving
  • sour cream, for serving
  • cilantro, for serving
  • salsa, for serving
  • guacamole, for serving
  • shredded cheese, for serving

Pour half the canned tomatoes in the bottom of a crockpot and spread them into an even layer. Top with half the peppers and half the onions. Sprinkle with the garlic. Top with chicken breasts.

In a bowl, whisk together the chili powder, cumin, paprika, coriander, salt, and pepper. Sprinkle the spice mixture over the chicken evenly. Flip the chicken and use the rest of the spices on the other side. Top with the remaining tomatoes, peppers, and onions.

Cover and cook on high for 3 to 4 hours, or until the chicken has cooked through and vegetables are tender. Remove the chicken, and shred it. Ladle out 1 C. broth from the crockpot and discard. In a bow, whisk together the lime juice and honey. Add it to the crockpot with the chicken and season with salt to taste. Toss gently and serve warm.
