Yellow zucchini taste just as good as green zucchini. Next time you want to cook a vegetable for a meal, here is one that packs all the nutrition of a zucchini in just about 15 minutes.

  • 1-2 yellow zucchini
  • 2 Tbs. olive oil
  • 2 dashes salt
  • 2 dashes black pepper
  • 1 garlic clove, minced

Slice the zucchini into small circle pieces and mince the garlic. In a large skillet, drizzle in the olive oil. Add the garlic and stir until tender over a medium-high heat for about a minute or 2. Add in the slices of zucchini and season with salt and pepper. Make sure zucchini does not overlap each other. Let zucchini cook for about 3 minutes until starting to brown. Flip them over and cook for another 3 minutes. Remove from skillet and serve as a side for dinner or as a meal of its own.
