  • 1 onion, chopped
  • 1lb ground beef or turkey
  • ½ teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup frozen corn
  • 1 jar salsa
  • 1 can black beans, drained and rinsed
  • corn bread mix
  • egg
  • ½ cup oil
  • ¾ cup milk
  • 8oz cheddar cheese, shredded

Pre heat the oven to 400F. In a skillet over medium heat, cook the onion, meat, cumin and chili powder. Cook for 10 minutes, or until browned. Add the corn, salsa and black beans and stir to combine well. In the mean time, mix the corn bread, egg, oil and milk together. Pour the cornbread mix in to an iron skillet and bake for 15 minutes, remove from oven, add the meat mix, top with cheese and bake for an additional 10 minutes. Remove from oven and serve.
