Skillet Eggplant

Ingredients
- 3 Tbs. olive oil
- 1/2 garlic clove
- 1 med. eggplant, cut into lg. dices
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 tomatoes, cut into pieces
- 1 tsp. oregano
Directions
Put olive oil and garlic in a skillet and brown garlic slightly. Add diced eggplant, salt and pepper and cook for 20 minutes. Add tomatoes and oregano and cook for 15 minutes.
