  • 1 C. all-purpose flour
  • 1 1/2 C. white sugar,
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 6 Tbs. frozen butter
  • 1 tsp. vanilla
  • 1/4 C. boiling water
  • 2 Tbs. cornstarch
  • 1/4 C. cold water
  • 1 Tbs. lemon juice
  • 4 C. peaches (fresh sliced or canned work fine)

Preheat oven to 400 degrees. In a food processor, mix the flour, 1/2 cup sugar, baking powder, and salt. Add vanilla. Pulse the butter in until the mixture resembles peas. Pour in 1/4 cup boiling water just until mixture is moist. In a separate bowl, dissolve the cornstarch in the cold water. Mix in remaining 1 cup sugar, lemon juice, and peaches. Transfer to a cast iron skillet. Drop the dough into the skillet by spoonfuls. Bake for 45 minutes in the preheated oven, until dough is golden brown.
