If you have an oven-proof skillet, you can simply use it for baking your quiche instead of a pie plate. Add ham or sausage to the skillet for an even more filling meal.

  • 1 Tbs. butter
  • 8 oz. fresh mushrooms, sliced
  • 4 oz. red onion, chopped fine
  • 10 oz. frozen spinach, thawed and drained
  • 5 eggs
  • 1/2 C. heavy cream
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 8 oz. sharp cheddar cheese, shredded

In a skillet, saute the mushrooms and onions in the butter until tender. Remove from the heat and stir in the spinach. In a bowl, whisk the eggs and add in the cream, salt, and pepper. Add the egg mixture to the mushroom mixture and stir well. Stir in the cheese and pour into a greased 10-in. pie plate. Bake for 35 to 40 minutes at 350 degrees. Let stand for 10 minutes before serving.
