This stuffed pepper casserole has all the flavor of stuffed peppers, but it's all made in one skillet so prep and cooking is super easy! For a healthier dish, leave the cheese off the top of it.

  • 2 Tbs. oil
  • 2 cloves garlic, diced
  • 2 bell peppers, diced
  • 1/2 medium onion, diced
  • 1 lb. lean ground beef
  • 1 (14 1/2 oz.) can whole tomatoes, diced
  • 1 (14 oz.) can chicken broth
  • 1 (8 oz.) can tomato sauce
  • 1 tsp. salt
  • pepper, to taste
  • 1 tsp. soy sauce
  • 1 C. long grain rice, uncooked
  • 1 C. shredded Cheddar cheese

In a large skillet, saute the peppers, garlic, and onions in 2 Tbs. oil over medium heat. Increase the heat to medium once the onions and peppers have begun to soften. Add the ground beef and season with salt and pepper.

Once the beef has cooked, add the chicken broth, tomatoes, tomato sauce, and soy sauce. Bring it to a simmer and stir in the rice. Cover and reduce the heat to low. Cook for 20 to 25 minutes, or until the rice is tender. Sprinkle the cheese on top and cover to let it melt.
