Skillet Summer Squash

I was given a huge summer squash about 3 inches around at the large end. I hated to chop it so I sliced the large end and sauteed it with other ingredients. Was so pretty and tasted great.

Ingredients

  • 1 large summer squash, about 3 inches round, sliced
  • 1 medium onion, sliced
  • 1/2 tsp. minced garlic
  • 15-20 grape tomatoes, sliced
  • 1 C. low-sodium chicked broth
  • 2-3 Tbs. extra virgin olive oil
  • Salt and pepper to taste

Directions

In an electric fry pan set on 325 degress, saute onions and garlic about 5 minutes. Stir occasionally. lace sliced rings of squash in one layer in pan and lightly brown. Turn over and lightly brown other side. Add broth, cover and simmer about 20 minutes. Add tomatoes. Cover and continue to simmer until squash is fork tender. Serve as a side dish.
