Skillet Supper
Ingredients
- 2 Tbs. butter
- 1/2 C. chopped onion
- 1/2 C. chopped green pepper
- 8 eggs
- 1/4 C. milk
- 1 tsp. seasoning salt
- 1/4 tsp. pepper
- 1 (3 oz.) package cream cheese, cubed
- 1 medium tomato, chopped
- 3 or 4 slices bacon, fried crisp and crumbled
Directions
In large skillet, cook onion and peppers in butter until tender. Mix eggs, milk and seasoning. Add chopped tomatoes and cream cheese. Pour into skillet. Gently run spatula under eggs as they cook, turning in large curds. Cook until eggs are just done but still moist. Sprinkle with bacon and serve immediately.
Yield: 8 servings, with biscuits.
