  • 6 chicken thigs
  • 2 C. yellow onions, sliced
  • 3 C. chicken stock
  • ½ C. flour
  • 2 tsp. olive oil
  • 3 T. butter
  • 1 T. garlic, minced
  • ¼ C. fresh parsley
  • 2 springs of rosemary
  • 1 tsp. salt
  • ¼ tsp. pepper

Season the chicken with the salt and pepper. Place the chicken thighs into the flour. Set aside. Prepare a skillet by heating up the olive oil. Add in the butter, place the chicken thighs into the skillet when the olive oil is hot. Brown the chicken thighs. Add in the sliced onions, minced garlic, fresh parsley and rosemary. Let everything sauté next to the chicken thighs. Add in the chicken stock and let it simmer for 15 minutes. Serve next to rice and enjoy.
