  • 6 cups of carrots, peeled and cubed
  • 1 can of chickpeas (15-16 oz.)
  • 5 cups of vegetable broth
  • 1 yellow onion, diced
  • 1 can of light coconut milk (13.5 oz.)
  • 3 tablespoons of olive oil
  • 2 tablespoon of garlic powder or minced garlic
  • 2 tablespoons of curry powder
  • 2 teaspoons of chili flakes
  • 1 tablespoon of lime juice
  • ½ teaspoon of cumin
  • salt, pepper
  • optional: chopped parsley and lime zest

Heat oil in a large pot and add the diced onions, garlic, curry powder, chili flakes and cumin. Sauté in medium heat until soft. Add the cubed carrots and continue to sauté for 5-10 minutes. Dust with a teaspoon of salt.
Add vegetable broth and bring everything to a boil, then simmer for 20-30 minutes, stirring every minute or two. Let it cool, then puree everything in a blender.
Once the mixture is smooth, pour it back into the pot and add coconut milk, chickpeas and lime juice. Add salt and pepper to taste, then cook on medium heat for 5 minutes.
Serve warm; garnish with lime zest and chopped parsley.
