  • 1 (5.9-oz.) pkg. butterscotch pudding mix
  • 3/4 C. unsalted butter
  • 3/4 C. brown sugar, packed
  • 1 egg white
  • 2 1/4 C. whole-wheat flour
  • 1 tsp. baking soda
  • 1 Tbs. ground ginger
  • 1 1/2 tsp. ground cinnamon

Preheat oven at 350 degrees F. Cream pudding mix with butter and sugar. Mix in egg. Blend well. Mix flour, baking soda, ginger and cinnamon in a bowl. Blend into pudding mixture. Place dough in fridge for at least 1 hour. Roll dough on a floured surface until 1/4-inch thick and cut cookies with gingerbread man cutter. Place on greased baking sheets. Bake for 10 to 12 minutes. Remove from oven and cool on wire rack.
