Sloppy Joes with Cornbread
Ingredients
- 1 8 1/2 oz. pkg. corn muffin mix
- 1 lb. ground beef
- 1 C. barbecue sauce
- Toppings: Shredded Cheese, Sour Cream, guacamole, chopped tomatoes or bell peppers, green onion or olive slices
Directions
Prepare corn muffin mix as directed on package. Pour into 8- or 9-inch cake pan. Bake at 400 degree for 20-25 minutes or until toothpick comes out clean. Cool slightly. Brown meat in skillet; drain. Add barbecue sauce; heat thoroughly. Cut cornbread into 4 wedges. Spoon 1/2 C. meat mixture over each cornbread wedge. Top with desired toppings.
