  • 1 C. eggplant, chopped and sautéed
  • ½ stick butter, melted
  • ¼ C. flour
  • Salt and pepper to taste
  • 2 C. milk
  • 1 ½ C. cheddar cheese, shredded
  • Parmesan for garnish

Directions
