  • 2 28 oz. cans Diced Tomatoes
  • 1 C. Vegetable Broth
  • 1/4 C. Basil Leaves, finely chopped
  • 6 Garlic Cloves, minced
  • 1 12" Baguette, cubed
  • Sea Salt, to taste
  • Ground Black Pepper, to taste

In a large crockpot, stir together the diced tomatoes with juices, vegetable broth, basil, and garlic. Cook on low for 5-6 hours. Pour tomato mixture into a blender with the baguette pieces and puree until smooth. Season with salt and pepper as needed before serving.
