  • 1 15.5 oz. can Pinto Beans, drained
  • 2 Smoked Ham Hocks, trimmed
  • 1 Medium Onion, diced
  • 1 Medium Carrot, peeled and diced
  • 2 C. Chicken Broth
  • 2 Dried Bay Leaves
  • 1/2 tsp. Dried Thyme
  • 1/2 tsp. Dried Rosemary
  • 1 tsp. Dried Parsley
  • 1/2 tsp. Sea Salt

Combine all ingredients in the slow cooker. Cover and cook on low for 6-8 hours. Carefully remove the ham hocks. Pull the ham off the bone and tear into bite-size pieces. Return the meat to the slow cooker. Adjust seasonings to taste before continuing to cook on low 10-15 minutes more. Remove bay leaves and serve.
