  • 2 1/2 lb. lean boneless beef roast
  • olive oil
  • 4 cloves garlic, minced
  • 2 C. beef broth
  • 2 1/2 tsp. dried oregano
  • 1 1/2 tsp. dried basil
  • 2 bay leaves
  • 1 tsp. dried parsley
  • 1/2 tsp. onion powder
  • 1/4 tsp. thyme
  • 2 tsp. Worcestershire sauce
  • sea salt and pepper
  • rolls and giardiniera, for serving

Season the roast with sea salt and pepper. Add oil to a large skillet and heat it over medium heat. Brown the meat on all sides, remove meat, and place in the slow cooker.

Add the garlic to the skillet and stir for about 30 seconds. Add the broth, herbs, Worcestershire sauce, salt if needed, and about 1/2 tsp. pepper. Scrape all the browned bits off the bottom and pour the mixture over the roast in the slow cooker. Cook on low for 4 hours, slice, and place back in the juices for another 30 minutes.
