  • 2 lb. Red Potatoes, peeled and cubed
  • 1 lb. Skinless Salmon Filets
  • 3 Medium Carrots, chopped
  • 2 Tbs. Butter
  • 1 Tbs. Lemon Zest
  • 1 1/2 tsp. Sea Salt
  • Ground Black Pepper, to taste
  • 1/8 tsp. Dried Oregano
  • 1/8 tsp. Dried Thyme
  • 1/8 tsp. Dried Basil
  • 2 C. Skim Milk

Layer potatoes, salmon, and carrots on bottom of crock pot. Pour water into crock pot until ingredients are covered. Add all other ingredients except the skim milk to the crock pot. Loosely cover and cook on low 4 to 5 hours. Stir in the milk, re-cover crock pot tightly, and continue cooking 1 to 2 more hours.
