Ingredients

  • 3 lb. beef roast, trimmed of fat
  • 1 large onion, diced
  • 1 C. beef broth
  • 4 oz. tomato sauce
  • 1/4 C. lime juice
  • 2 cloves garlic, minced
  • 1 tsp. cumin
  • 1 T. chili powder
  • 1 1/2 tsp. salt
  • 1 tsp. cilantro
  • 1 jalapeno pepper, seeded and chopped
  • 8 flour tortillas
  • 3/4 C. lettuce, shredded
  • 1 pt. cherry tomatoes, halved
  • 1 C. shredded cheddar or Mexican cheese blend

Directions

In a slow cooker, add onions and beef. In a medium bowl, combine remaining sauces and seasonings and drizzle over beef roast. Cook on low for eight hours. Shred the meat using two forks. Distribute meat on tortillas and top with lettuce, tomato, and cheese.
