  • 1 T. freshly ground black pepper
  • 2 T. olive oil

Preheat oil in a large skillet over medium heat. Generously season the roast with salt and pepper. Add to the skillet and sear each side until brown, which will take about three minutes per side. Transfer to a crock pot. Cook on a low heat setting until the meat reaches 140°F, which should take 90 minutes. Let stand for 10 minutes before carving the roast against the grain.
