  • 1 lb. ground beef
  • 2 C. vegetable stock
  • 2 C. prepared wild rice
  • 1 15-oz. can diced tomatoes
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, minced
  • 2 C. shredded cheddar cheese
  • 1 egg
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 lb. pasta of choice

In a large bowl, mix together beef and rice. Pour in half of the diced tomatoes and sprinkle with onion, garlic, and cheese. Stir in egg, salt, and pepper. Mix until fully incorporated. Pour the vegetable stock into your crockpot and stir in meat mixture. Top with remaining diced tomatoes. Cover and cook on a low setting for five hours, stirring occasionally. Prepare your pasta according to box directions and combine with meat mixture.
