  • 2 Tbs vegetable oil
  • 2 lb beef chuck; cut the pieces
  • 3 garlic cloves; chopped
  • 2 Tbls chopped ginger
  • 2 Tbs light brown sugar
  • 1 Tbs curry powder
  • 1 Tsp cayenne pepper
  • 12 oz light coconut milk
  • 3 carrots; chopped
  • Salt
  • Pepper

Prepare a large pan and heat some oil over medium high heat. Season beef pieces with salt and pepper and toss them into the pan. Toss until it begins to brown on all sides.

Once it is brown, add them into the slow cooker and toss in the garlic and ginger.

In a bowl, mix the coconut milk, sugar, curry powder, cayenne pepper. After it has been well combined, pour it into the slow cooker over the meat, then add in the carrots.

Cover and cook on low for 5 hours until meat pieces are tender. Stir the tomatoes and serve!
