We have a crockpot casserole that you can make the night before for an easy breakfast meal. This spinach casserole is mixed with eggs so you'll start your day off in a great mood.

  • 2 Tbs. fresh sage, chopped
  • 1 Tbs. rosemary, chopped
  • 1/2 can low-sodium cream of chicken soup
  • 1 tsp. sea salt
  • 1 tsp. fresh ground black pepper
  • 2 C. fresh baby spinach
  • 1 1/2 C. feta cheese, crumbled
  • 12 eggs

In a large bowl, mix seasonings and soup. Pour in crockpot. Beat eggs well and pour half in slow cooker. Cook spinach in large skillet with a little bit of oil for 2 to 4 minutes. Place in slow cooker. Sprinkle feta cheese on top. Pour remaining egg mixture on top. Cover and cook on low for 7 to 8 hours.
