Ingredients

  • 6 C. chicken broth
  • 1 medium white onion, diced
  • 3 medium chicken breast halves, cut into 1/2" pieces
  • 1 C. carrots, sliced
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 2 C. leftover mashed potatoes
  • 1 (10-oz.) can cream of chicken soup
  • 1 Tbs. parsley flakes
  • flaked crab, for garnish (optional)

Directions

Stir first seven ingredients in a 5 qt. crockpot. Cover and cook on high for 3 to 4 hours. In a large bowl, mix the remaining ingredients. Stir mixture in slow cooker. Cover and cook on high for 30 to 45 minutes. Serve with garnished basil sprigs, if you desire. Garnish with flaked crab, if desired.
