  • 4 each chicken drumsticks and thighs (about 2 1/4 lb), skin removed
  • 1 med. onion, sliced
  • 3 green peppers, keep whole put remove the center
  • 4 large tomatoes, cut into 1 inch slices
  • 1/2 can (14 1/2 oz) petite diced tomatoes with zesty jalapeños
  • 2 Tbs. fresh lime juice
  • 2 Tbs. soy sauce
  • 1/2 tsp. ground ginger
  • 1/4 C. fresh mint leaves, cut in strips

Begin by putting chicken on onions in a 3 1/2-qt. or larger slow cooker. Add red pepper and tomato. Mix in the 1/2 can of tomatoes, lime juice, soy sauce and ginger in a bowl; pour over top.  Cover and cook on low 7-9 hours or until meat is tender. Sprinkle each serving with mint.
