Slow Cooker Chicken Sloppy Joes

I was looking for a way to make sloppy joes a little healthier. Instead of using ground chicken which has fat added, I use chicken breasts. I always purchase chicken breasts with or without the bone when it is on sale and freeze for future use - leaving some as breasts and slicing others into cutlets.

  • 2 cans sloppy joe mix
  • 6 chicken breasts, deboned
  • 3 baking potatoes or 6 medium red potatoes, washed and cut in half and then sliced to about 1/2 inch thick.
  • 1/4 C. baby carrots, whole or shredded (optional)

Add 1 1/2 cans Sloppy Joe Mix and remaining ingredients (sometimes I shred the carrots so everyone will eat them (sneaky..)). Cook on high about 4 hours or until the chicken shreds.  If you are home, turn the chicken and potatoes every hour or so - if not, no worries. If the chicken is cooked before the potatoes, remove chicken to container and shred, adding some of the sauce. Leave the potatoes in the cooker until they are tender. Return chicken to cooker and add the remaining can of mix and heat through. Serve on crusty bread with the potatoes on the side and a healthy salad!
