  • 2 lbs. boneless, skinless chicken breast halves
  • 1 onion, thinly sliced
  • 1 red bell pepper, julienned
  • 1 tsp. ground cumin
  • 1 1/2 tsp. chili powder
  • 1 Tbs. lime juice
  • 1/2 C. chicken broth
  • 8-10 warmed flour tortillas
  • sour cream, guacamole, lettuce, and tomatoes for topping

Cut chicken into diagonal strips and place into a crockpot sprayed with vegetable cooking spray.  Top with onion and bell pepper. In a bowl, combine cumin, chili powder, lime juice, and chicken broth.  Pour over chicken and vegetables.  Cover and cook on low for 5-7 hours.  When serving, spoon several slices of chicken mixture with sauce into the center of each tortilla. Fold. Serve with toppings.
