  • 2 Eggs
  • 2/3 C. Vegetable Oil
  • 1 1/3 C. Cranberries
  • 1 1/4 C. Sugar
  • 1 Tbs. Vanilla Extract
  • 2 C. Flour
  • 1/4 tsp. Salt
  • 1/2 tsp. Baking Powder
  • 1 Tbs. Cinnamon
  • 1/4 tsp. Ground Nutmeg
  • 1/2 C. Walnuts, chopped
  • Store bought vanilla glaze
  • Extra cranberries for garnish (optional)

Begin by beating your eggs and add them into a mixing bowl along with the vegetable oil, sugar, cranberries and vanilla. Mix well.

Add in your dry ingredients (flour, salt, baking powder, cinnamon, walnuts, and nutmeg) and stir well.

Pour into a greased 2 quart mold (or whatever will fit in your crockpot) and place into the crockpot. Bake on High for 3 hours or until done. When bread has cooled dizzle the vanilla glaze on top.  Garnish with cranberries if desired. Serve up and enjoy.
