Ingredients

  • 2 C. dried black-eyed peas
  • 3 C. cooked ham, cubed
  • 1 lg. onion, chopped
  • 2 C. celery, sliced
  • one 15-oz. can yellow hominy, drained
  • two 15-oz. cans stewed tomatoes
  • one 10-oz. can chicken broth
  • 2 tsp. seasoned salt
  • 2 Tbs. cornstarch

Directions

Rinse and drain black-eyed peas in a saucepan. Cover peas with water and bring to a boil. Drain again. Place peas in a large slow cooker with 5 cups of water. Add ham, onion, celery, hominy, tomatoes, broth, and seasoned salt. Cover and cook on low for 7-9 hours. Mix cornstarch with 1/2 cup water, turn cooker to high, pour in cornstarch mixture, and stir well. Cook for 10 more minutes. Add salt and pepper to taste. Stir well before serving.
