Ingredients
- 1 Medium Yellow Onion, sliced
- 1 tsp. Dried Oregano
- 1/2 tsp. Dried Basil
- 1 tsp. Fennel Seeds, lightly crushed
- 1/4 tsp. Kosher Salt
- 1/8 tsp. Ground Black Pepper
- 8 Lamb Chops
- 1 tsp. Minced Garlic

Directions
Place the onion slices at the bottom of a large slow cooker. In a small bowl, combine the oregano, basil, fennel seeds, salt and pepper. Rub the herb and spice mixture into all sides of the lamb chops, and let chops sit for 10 minutes. Layer chops over onion. Sprinkle with garlic. Cover and cook on low for 4-6 hours, or until meat is tender and a thermometer registers the internal temperature as 145 degrees.
