The traditional Jewish soup features the tasty Matzah balls and now, you can make it in your crockpot. Prepare the Matzah balls first before you mix all the ingredients.

  • 2 large eggs
  • 1 large egg white
  • 1/2 tsp. salt
  • 3/4 C. Matzo meal
  • 1 Tbs. canola oil
  • 3 Tbs. cold water
  • 8 C. chicken broth
  • 2 parsnips, peeled and chopped
  • 1 large carrot, peeled and chopped
  • 1 onion, chopped
  • 1 C. broccoli florets
  • 1 C. mushrooms, sliced
  • 2 Tbs. parsley, chopped

Beat eggs, egg whites and salt in a bowl. Whisk in matzo meal, oil and cold water. Cover and chill the mixture for at least 1 hour. Bring broth to boil. Gently roll the chilled matzo dough into balls and place in crockpot. Pour remaining ingredients. Cover and cook on low for 7 to 8 hours.
