  • Soup:
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 medium white onion, peeled and vertically sliced
  • 3 cloves garlic, thinly sliced
  • 1 bay leaf
  • 3 sprigs fresh thyme
  • 8 C. water
  • 1/2 tsp. pepper
  • 2 tsp. salt
  • Matzo Balls:
  • 1/2 C. matzo ball mix
  • 2 Tbs. vegetable oil
  • 2 eggs

Stir all soup ingredients in slow cooker. Cover and cook on low for 7 to 8 hours. In a separate bowl, mix together matzo ball ingredients. Refrigerate for 15 minutes. Remove and shape into 1-inch balls. Place balls back in soup. Cover and cook on low for 20 minutes. Add salt and pepper to taste.
