Swedish meatballs can easily be made in your crockpot! So many delicious peppers mix together with your beef to make these the tastiest meatballs you've ever had!

  • 1 lb. ground beef
  • 2 C white rice
  • 1/2 C white onion, chopped
  • 1 tsp. minced garlic
  • 1 egg
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. cayenne pepper
  • 1 jar pasta sauce
  • 2 cans diced tomatoes
  • Basil, for garnish
  • Red serrano pepper, for garnish
  • Nonstick cooking spray

Mix ground beef, white onion and garlic. Once well blended, add in egg, salt, cayenne pepper and pepper.

Roll pieces of ground beef into ball and repeat until all meat is used. About 20 meatballs will be formed.

Spray slow cooker with nonstick cooking spray. Pour one can of diced tomatoes and pasta sauce in slow cooker. Layer the meatballs on top (I used a 6 quart slow cooker) of the tomato mixture. Pour the other can of diced tomatoes on top.

Cover and cook on low for five to seven hours or high for three to four hours. Remove from the slow cooker and serve over a bed of white rice. Garnish with red serrano pepper and basil.
