This spicy shredded beef will be perfect for any taco night. Simply put all the ingredients in your crockpot and all the meat will absorb the delicious spices.

  • 2 lb. flank steak
  • 2 red bell peppers, seeded and sliced
  • 1 red onion, sliced
  • 1/2 C. cilantro, chopped
  • 2 Tbs. garlic
  • 2 Tbs. chili pepper
  • 1 (15-oz.) can diced tomatoes
  • 1/2 C. red wine vinegar
  • 1/2 tsp. ground black pepper
  • 1 Tbs. ground cumin

Add all ingredients into the slow cooker. Cover and cook on high for 4 to 6 hours. When the meat is done, remove from the slow cooker and shred. Return the meat to the slow cooker and coat with sauce. Serve with tortillas.
