When making tacos or enchiladas, create this Mexican chili soup in your slow cooker for a wonderful side dish. There's only a few ingredients needed as well.

  • 2 lb. stew meat, cut into 1" cubes
  • 2 (15-oz.) cans Mexican stewed tomatoes
  • 1 (1-oz.) pkg. taco seasoning mix
  • 2 red bell peppers, chopped
  • 2 (15-oz.) cans pinto beans, liquid reserved
  • 1 (15-oz.) can whole kernel corn, liquid reserved
  • 3/4 C. water

With a little bit of olive oil, brown meat in a large skillet over medium heat. Mix beef and remaining ingredients in slow cooker. Cover and cook on low for 5 to 7 hours.
