Slow Cooker Potatoes and Vegetables
Serving Size / Yield
- 5 Potatoes, Peeled and Cut Into Small Chunks
- Carrots, Chopped and Diced
- Kidney beans
- Red Pepper, Chopped and Diced
- 1 Medium Onion, Chopped
- Chicken Broth, Can Be Substituted for Vegan/Vegetarian Chicken Broth
Place vegetables and potatoes in a slow cooker.
Add chopped onions and season with salt and pepper.
Add enough chicken broth to cover everything.
Cook for 4-6 hours on high.
