  • Corned Beef:
  • 3 1/2-4 lb. corned beef brisket
  • Water to cover brisket
  • 2 Tbs. prepared mustard
  • 1 1/2 tsp. horseradish
  • 2 Tbs. red wine vinegar
  • 1/4 C. molasses
  • Sandwich:
  • Store bought Thousand Island dressing
  • 2 C. Sauerkraut
  • 6 slices Swiss cheese
  • 6 slices of sliced rye bread

In slow-cooker, cover corned beef with water. Cover and cook on low for 10 to 12 hrs. Drain cooked corned beef; place on broiler pan or oven-proof platter. Combine mustard, horseradish, wine vinegar, and molasses. Brush on all sides of meat. Brown in 400° oven for about 20 mins or until it begins to brown; brush with sauce several times while browning. Once the meat has cooked begin making your sandwich.  Toast the rye bread.  Then add 4-5 slices of corn beef.  Then top with 2 slices of Swiss cheese, a few spoonfuls of sauerkraut, and spoonful of Thousand Island dressing. Serve up and enjoy.
