You can never have too many recipes for a good salsa! This fresh and easy recipe is great for making large batches of salsa for parties and potlucks. Serve it with tortilla chips and enjoy!

  • 10 Roma tomatoes, whole
  • 28 oz. can whole plum tomatoes
  • 1 onion, peeled and quartered
  • 2 jalapenos, tops cut off
  • 3 whole garlic cloves, peeled
  • 3/4 tsp. salt
  • 1 bunch cilantro

In the crockpot put the Roma tomatoes, plum tomatoes, onion, jalapenos, and garlic. Cook on high for 2-3 hours, until the tomatoes are soft. In a blender, add half of the crockpot mixture, including the juices, and half the bunch of cilantro. Blend until the desired consistency is reached. Repeat for the other half of the crockpot mix and the rest of the cilantro. Put into a container and add the salt to taste.
