  • 3 lb. pork roast
  • 6 oz. Mexican chorizo
  • 1 large onion
  • 3 cloves garlic, minced
  • 1 (15-oz.) can diced tomatoes
  • 1/2 C. chicken stock
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. dried oregano
  • 1 tsp. dried thyme
  • 3 bay leaves

Place the pork roast in the slow cooker with all the ingredients except the chorizo. Heat a skillet on medium high heat and brown the chorizo, breaking up the lumps. Add the chorizo to the slow cooker. Stir the slow cooker to combine the ingredients, Cover and cook on low 7 to 8 hours. Remove the pork roast and set on a plate. Shred the pork with two forks. Serve with warm tortillas.
