These sweet potato slices will be a great side for lunch or dinner. Healthy, but still packed with lots of flavor.

  • 1 lb sweet potatoes, thick slices and then cut the slices in half
  • 1/4 C. butter, melted
  • 2 C. packed brown sugar
  • 1/3 C. orange juice
  • 1/8 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 2 tbsp parsley

Cut sweet potatoes as directed and place them in a 4- to 5-quart slow cooker.  Add butter, brown sugar, orange juice, salt, parsley, and a cinnamon.  Stir well.  Cover and cook on low for 4-5 hours.
