- 1/2 C. leftover peas
- 1/2 C. leftover corn kernels
- 1 vidalia or other sweet onion
- 1/8 lb. butter for frying
- Salt and pepper to taste
Slice onion into thin slices. Place butter in frying pan. Saute the onion until carmelized, but not burned. Add the leftover peas and corn and continue to heat. Sprinkle with salt and pepper to taste. Serve when heated through.
