Small Ham and Cheddar Quiches

- 1 8-oz. can crescent rolls
- 1/4 lb. deli ham, chopped
- 1/4 C. cheddar cheese, shredded
- 3 eggs, beaten
- salt, to taste
- pepper, to taste
- 1/2 tsp. nutmeg
- 1/2 tsp. chili powder (or paprika for one that's more mild)
Preheat the oven to 375 degrees. In a big bowl, mix the eggs, cheese, ham, curly parsley, and spices.
Unroll and separate the dough into four triangles. Press the perforations in each triangle so they seal. Cut each rectangle into 3 squares, and press each small square into the openings in a greased muffin pan.
Pour 3/4 Tbs. of the mix into each cup and bake for 15-20 minutes or until the eggs set. Cool for 5 minutes, then finish cooling on a wire rack. If serving warm, allow to cool for 5 minutes.
